Organic Black Beans and Brown Rice

Bonjour! This is last night's post for a snack and dinner... I fell asleep watching Veronica Mars on Netflix.  At the Retreat someone said to turn off the TV and avoid electronics for at least 1 hour before bed.  I am SO bad at that!


Eats

Dinner

Organic Black Beans and Brown Rice.


Beans and rice make a great, nutritious and delicious meal.  Cheap and easy to make too!

Ingredients:

  • 1 can of organic black beans (I purchase Organic Black Beans in a can from Publix, the GreenWise brand.)
  • 1/2 to 1 cup of dry rice (One of my favorite brands of rice is Lundberg Wild Blend.  It's a little pricey, but the flavor can't be beat. Organic brown rice is a good alternative.)
  • 1/8 to 1/4 cup organic apple cider vinegar
  • 1-2 Tbsp extra virgin olive oil
  • seasonings to taste
  • vegetable and cheese toppings of choice
Directions:
  • Cook rice according to package directions.
  • When rice has about 10-15 minutes left, you can start the beans.  Heat olive oil in pan.  Open the can, do not drain, and empty the contents into a pan.
  • Add apple cider vinegar and seasonings.  Cook beans until boiling, reduce to simmer.
  • Chop vegetable toppings.  I like to use tomatoes, onions, garlic, jalapeno, and spinach.
  • Shred cheddar cheese and get sour cream or Greek yogurt ready for toppings.
  • Serve beans over rice in a bowl and each person can customize their meal with toppings they enjoy.

Dessert

Oh yeah, I almost forgot... I did eat a 100 calorie Klondike bar too.  That's probably why I felt so run down this morning, even after almost 8 hours of sleep.  Dessert right before bed is a no no!

I did OK on meeting my goals today...

  • Wake up a bit early -- done!
  • Exercise upon rising -- done!
  • Complete healthy habits -- skipped body brushing, oil pulling and a mag soak... will do better tomorrow.
  • Make and drink a green smoothie -- done!
  • Skip the sweets (including wine) -- messed up and ate dessert when I knew better.
  • Bring lunch to the office -- done!
  • Experiment with a new butternut squash recipe -- found some great ones today from WFM!
  • Try 2/day blog posting (noon and evening) -- Well, it kinda worked
  • Use the Rebel for photos -- done!

I was so worn out by the time I got home, went to the health food store, made dinner, cleaned the kitchen, etc.  Just laid down and fell asleep watching some show online.

2 Eggs with BVI seasoning, WW Toast with EVOO, Organic Romaine.



Iced Coffee with Almond Breeze and Raw Sugar.



Lunch

Leftover Black Beans and Brown Rice with Organic Mixed Greens and Avocado.


Then a cupcake...


I did end up bringing some Red Vel-beet Cupcakes to work.  They got the T-Tapp stamp of approval!  Everyone loved them.


Dinner

Wild Sushi-grade Tuna and Quinoa Tabbouleh.




After I mixed the hot quinoa in with the tabbouleh and added some green onion.

I ♥ quinoa!


Dessert

Klondike Ice Cream Sandwich.



Well, I didn't do so great today. 2 desserts and 0 exercise in one day does not fit a healthy lifestyle.  Over my vacation and the month of June I really let my sweet tooth get out of control.  Now I'm craving sugar every day... and cupcakes after dinner.

Red Vel-beet Cupcakes

I discovered this fantastic recipe from the blog Coconut Lime and have been meaning to make them for a while now.

Since it was Independence Day and all, I envisioned making red velvet cupcakes with white creamy frosting and blue sprinkles (the whole red, white and blue theme). This idea was totally spontaneous and I made it to the store around 4pm. Not too many holiday choices for decorating cupcakes, so no sprinkles today.



The cupcakes came out beet-ifully! Not as red as I expected, more on the chocolate side (which is fine by me). No food coloring in this recipe!



Also used her icing recipe, but mine didn't really "thicken" up so I added a bunch of powdered sugar and let it cool. I really try to avoid any store-bought icing (its all filled with chemicals). I don't have a mixer either, which would solve a lot of problems. Hand mixing icing burns some calories.

However, I had success with my handmade icing... the day after it had been sitting in the fridge. (Baking Tip from Lolly: Let cupcakes AND icing completely cool, at least 2 hours, before icing.)


 Tonight I made a new batch and added chocolate chips to 1/2 the batter. Super chocolaty!


 This one has the super creamy cool icing. YUM!

Now that I've eaten a few too many of these creations... it's time for another few sets of Hoe Downs before bed.

P.S. I plan on doing a 45+ minute T-Tapp workout tomorrow to torch the added sugar from my new cupcake addiction.  Tomorrow is also the last day of the 2010 60-Day T-Tapp Challenge!  I can't wait to see everyone's progress.  Good luck!

Sweet Beets


I never thought I'd say that I love beets, but I do now.  They are such a delicious veggie!  And you can't beet that color. LOL.

Workout/Exercise - Basic Workout Plus (from Tempo 2 - 8 Reps)... workout done while the rice was cooking.

I wasn't going to rush into doing the full workout today.  Mainly because I didn't want to detoxify super fast and get sick again.  Taking it a bit slower this time.

Nourishment
Fruits - check! 3 servings today.
Veggies - check! 2 servings today. (I'm counting the cupcakes!)
Water - check! About 2 liters today.

Supplements
Alfalfa: 6 caps
Natural Calm - Raspberry Lemon: 2 tsp
Vitamin D3: 4 sprays (need a new bottle!)

Jamba Juice 16oz Mega Mango Smoothie (Fresh OJ, Pineapple Juice Blend, Frozen Mangoes, Frozen Strawberries) and a Banana & Brown Sugar Steel Cut Oatmeal.


Lunch

I planned on eating a AB& J on WW, but ended up eating a plateful of Jen's Mac & Cheese and spinach dip with tortilla chips. YUM!


Dinner

Organic Black Beans & Brown Rice with Sharp Cheddar, Scallions and Mixed Greens.



Dessert

2 Red Vel-beet Cupcakes.  How could I resist, right?

Holy tastebuds!

Oh my, I have more Red Vel-beet cupcakes (some with chocolate chips!) cooling, creamy vanilla frosting and a light coconut topping.  I'm holding off for another one until tomorrow... and will might bring some to the T-Tapp office to share.

I attempted a green monster with the ingredients in my fridge, but the overall final drink was not edible. Yuck! So much for trying to save frozen foods (or dishes apparently) during moves.

I did get to use my new beautiful green drink container from The Raw Divas though! Isn't it cute? ♥




So... I got Starbucks instead. (( sigh ))






Lunch

About 2/3 of this chicken burrito bowl from Chipotle.




Dinner

More Mexican food for dinner...

Preparing for the Move

Tuesday Recap...

Spent the entire evening/night preparing for the move on Tuesday. I can't believe how fast the moving date is approaching! Seriously did not get to bed until almost 2am.

Blueberry Green Monster.



Ingredients:
  • 1 cup frozen organic blueberries
  • 1/2 frozen banana
  • 2 cups fresh organic spinach
  • 1 cup Original Almond Breeze
  • 1/2 cup Chobani 0% Plain yogurt
  • 1 Tbsp organic flax
  • 1/4 tsp bee pollen

Lunch

Rotisserie Chicken Salad with 2 Tbsp Hummus (added later).




Plus a Venti Iced Green Tea (unsweet).




Snack

String cheese!




Dinner

Beef Stroganoff... Marcel had this cooking when I got home and it smelled SO good I could not resist!




Snack

Dessert

3 cookies and some milk.

{ weekend } Beach Day & Rainy Wedding


Gloriously beautiful St. Pete Beach!


As you may have noticed I haven't posted since Friday at lunch... life has been busy! I'm getting ready to move out of my apartment and apparently haven't found the time for blogging.

This post will be backwards starting with Sunday and ending with Friday's dinner and drinks.

This weekend I was pretty bad... skipped blogging, workouts, brushing, oil pulling, supplements, healthy eating, etc. Sometimes it's good to let things go for a few days, however now I feel like my body needs to be reset... and it does!


Sunday, April 25th

My entire Sunday was pretty much wasted away by computer time. Yes, I did clean and organize some of my stuff for the move. But then got sucked into researching stuff online and it was time to head to Matt and Jessica's wedding before I knew it. I got pretty and we started driving to Lutz. The sky looked strange and threatening. After they were married and the reception started (under a tent with tables, flowers, candles and a DJ) the sky let it all out.



Pretty much the entire wedding party got soaked. We moved inside the house to dry off and eat cake.


Eats

Einstein's Everything Bagel with Cream Cheese and Medium Coffee.






Snack

Kettlecorn... gave me a tummy ache!




Lunch

The rest of my Eggplant Marino from Friday's lunch.




Dinner

I ate a small plate of food at the wedding... the meatballs were to die for, and a few bites of a pumpernickel roll. Sorry no photo!


Dessert

Saturday, April 24th

Saturday morning we planned on waking up early (yeah right!) and going to St. Pete Beach to meet up with everyone. Well, we ended up going to the beach but didn't get there until about 2pm. The place was packed due to a sporting competition on the beach. I don't think I've ever seen that many people on such a small section of the beach at one time. Even though it was later in the day I still got some sun. The weather was beautiful and breezy, so the beach wasn't hot at all.

After the beach we headed home to shower, change and go to my Dad's for dinner.

Egg on 1/2 Ezekiel English Muffin with Spinach and Cheese.



Plus a little Organic OJ.

I basically had a liquid lunch (a few Bud Lights and a Yuengling) with some popcorn (not pictured).








Later when we got home from the beach I made some Organic Carrot and Beet Juice.

Friday, April 23rd

Friday evening after work we had some friends come over, kinda of unexpectedly but it worked out perfectly. We all decided to go out to dinner at Whiskey Joe's... and drove there instead of walking. It was okay this time -- service and food-wise. They messed up our order, but we ate it anyway.

I don't think I got to bed before 2am... so it was a good night!

Marcel and I shared these fried shrimp and salad.





Then the Zwack girls came around giving out shots!

Zwack is an 80 proof (40% alcohol) herbal liqueur made in Hungary with a secret blend of more than 40 different herbs and spices. It was pretty good... kinda of a mix between Jager and Goldschlager.




Dessert

Snickerdoodle Cookie.
